Quinoa and Black Bean Salad

Ingredients

Preparation

  1. Bring water to boil in a medium saucepan over medium high.
  2. Rinse quinoa well under cold running water.
  3. Add salt and quinoa to water, return to boil.
  4. Reduce heat to medium, cover and cook until liquid is absorbed, about 15 minutes.
  5. Transfer to colander to drain and cool slightly.
  6. Meanwhile, combine remaining ingredients in a large bowl.
  7. Add quinoa.
  8. Taste and add salt if needed.
  9. Let cool at least 30 minutes.
  10. Serve at room temperature.
